Today is a soup kind of day. Not too cold, not exactly wet but damp and grey. I need something to cuddle me from the inside. I also do not want to have to go out or spend any money. Vegetable soup it is.

An inventory of the vegetable rack, pantry and fridge has revealed the perfect ingredients:

  •  Carrots
  • Potatoes
  • Some soggy celery
  • One leek
  • Black lentils
  • Chicken stock
  • Mint and parsley from the garden

Chop up the vegetables in to small chunks, this is cuddle food, you don’t want to have to cut up your carrots and slices just aren’t right for soups.   Melt some butter in a heavy bottomed pan and add the chopped vegetables and herbs. Put the lid on, turn the heat down low and let the vegetables “sweat”, you want them to soften not brown. Shake the pan occasionally. Once the vegetables are soft and the onion translucent add sufficient chicken or vegetable stock to give the consistency you like. We like our soup veg heavy, some people prefer more liquid.

Take off the lid and leave to simmer for 15 minutes or until you can’t bear it any longer and have to have a bowlful. Season to taste.

Pour yourself a bowl, curl up on a soft chair and allow yourself to be cuddled from the inside.
